This is a pimped up Hugh Fearnley-Whittingstall recipe. Pimped by a sister-in-law - called Phoebe surprisingly! It's a vegan stew (unless you add cheese / sour cream) made from stuff you could have lying around in your cupboards. I never used to have this stuff lying around, I do now.
It is delicious, makes loads and freezes brilliantly. You are better making a big batch and saving some for another day.
I am sorry about the photo, it blatantly has cheese in it, it's the ONLY photo I have of Phoebe's stew.
You can also serve this with rice, konjac rice or have it on it's own. It is very filling.
